Slow Cooker Meatballs with Spaghetti Squash


Slow Cooker Meatballs with Spaghetti Squash

Prep Time: 15 minutes
Cook Time: 3-6 hours
Serves: 4

Special Tools:
Slow Cooker (use a liner if you have one for easier clean up)
Foil lined baking sheet
Medium size ice cream scoop
Large mixing bowl

Ingredients:

1 medium spaghetti squash

For the meatballs:

1 lb grass fed ground beef
½ lb mild pork sausage
1 egg
¼ large yellow onion, minced
¼ large green pepper, minced
¼ cup almond flour
1 tbsp garlic powder
1 tbsp oregano
¼ tsp of cayenne pepper
a few pinches of sea salt and cracked black pepper

For the sauce:
1 14.5 oz can of diced tomatoes
1 6 oz can of tomato paste
5-6 cloves of garlic, minced
½ large yellow onion, diced
a handful of chopped fresh basil
a few pinches of sea salt and cracked black pepper

Instructions:
1. Put all of the ingredients for the meatballs in a large bowl. Use your hands to mix well.
2. With an ice cream scoop, form meatballs about 1.5 – 2 inches in diameter.
3. Place all the meatballs in a slow cooker.
4. Wash and rinse the bowl, and use it again to mix all the ingredients of the sauce together.
5. Pour the sauce over and around the meatballs.
6. Cover and put on high for 3 hours or low for 5-6 hours. Stir about once an hour.
7. About 45 minutes before the meatballs are done, preheat the oven to 400 degrees.
8. Cut the spaghetti squash in half long ways. Place both halves face down on a foil lined baking sheet and bake for 35-40 minutes. You’ll know it’s done when the outside gives a little when you press it. Scoop out the seeds and pulp.
9. Use a fork to shred the “noodles” and top with some meatballs and sauce. Enjoy!

Steak Burrito Bowl


I haven’t posted anything in quite a while. Mostly because we’re so busy these days preparing for Baby Blanco. I can’t believe we’re already in the third trimester. Only ten weeks left until we meet this little jumping bean. In the meantime, I’m trying hard to keep up with a paleo-ish diet and be as consistent as possible in the gym.

I have to say, I feel like I was super lucky for never having to experience any sort of morning sickness or crazy food aversions. I read an article several months back from The 80/20 that explained how women who ate a healthy diet prior to becoming pregnant were less likely to experience morning sickness. Don’t be fooled, there was, and still is, plenty of off-putting things people don’t warn you about while being pregnant. But all-in-all, the goodness and excitement outweighs the bad and ugly parts.

One of the areas that I like, but am cautious about for obvious reasons, is food cravings. While I want to go ham on just about everything sugary and carb-tastic, I know the reality is it will be much harder taking the weight off after pregnancy than it is putting it on in the first place. So like my like pre-pregnancy lifestyle, I’m trying hard to stick to 80/20 eating, though I’m sure it’s more like 70/30 Ha! In the first trimester, I really wanted Chinese food. There was this hole in the wall place not far from where my family and I lived in Jacksonville. I may have even mentioned this place in a previous post (I seriously loved it). I would literally gorge myself on as much lo mein, beef and broccoli, sweet and sour chicken, egg drop soup, and whatever else looked appealing that day. All I can do is shake my head now. But I was seriously craving this place for weeks. Thankfully, I think I ate Chinese only once while visiting my in-laws. I barely mentioned it being a craving and an hour later I had multiple containers of Chinese food ready to be consumed. These days, I’m craving mostly tacos or some variation. I can’t eat enough avocadoes or guacamole, so at least once a week we have tacos or taco salads. Yesterday I had an idea to make a burrito bowl. I don’t usually eat tortilla shells anyway, but I like everything else inside a burrito, thus emerged my steak burrito bowl. Enjoy!



*Disclaimer – if you’re going for strict paleo, leave out the rice, beans, cheese, and Greek yogurt.



Steak Burrito Bowl



Prep Time: 4-6+ hours (inactive)

Cook Time: 1 hour, divided

Serves: 4



Special Tools:

Grill

Rice Cooker

Small pot

Medium sauté pan

High speed blender or food processor

Small bowl



Ingredients:



Steak Marinade + Bean/Rice Seasoning:

1 + ½ tsp of chili powder

½ tsp of garlic powder

½ tsp of onion powder

½ tsp of cumin

¼ tsp of cayenne pepper

¼ tsp of sea salt

juice of one lime



Burrito Bowl Toppings:

1 lb of skirt steak (or you could use flank)

1 can organic black beans

½ cup uncooked white rice

1 medium yellow onion, sliced

1 medium red bell pepper, sliced

1 tomato, diced

1 avocado, diced

1 cup of sprinkle cheese

4-6 cups of lettuce

handful of roughly chopped cilantro



Cilantro-Avocado Cream:

1 avocado

juice of 1 lime

½ cup of chopped cilantro

¼ - ½ cup of full-fat Greek yogurt (I used Chobani brand. Has the most fat and least amount of sugar of the other brands I looked at in the store. You could potentially use coconut milk, though the flavor and consistency would be less like sour cream).



Instructions:

1. In the small bowl, mix together all of the seasonings for the marinade, except the lime juice.

2. Place the steak in a resealable plastic bag with the lime juice. Add half of the seasoning mix to the bag and toss the sealed bag around to coat all parts of the steak. Place in the refrigerator for at least 4 hours.

3. About an hour before the steak comes out, place the beans in a small pot. Add half of the remaining seasoning mixture to the pot. Cover and let the beans cook on low for about an hour, stirring occasionally.

4. About 30 minutes before the steak comes out, add your rice to the rice cooker. Wash it twice. Add ¾ cup of water, 1 tbsp of olive oil, and the remainder of the seasoning mixture to the cooker. Put the lid on and start it up. (Confession: I’ve never cooked rice on the stove before. I have a rice cooker! If you don’t, look up how to cook it on the stove, because I don’t know.)

5. About 20 minutes before the steak comes out, heat the sauté pan on medium with a tablespoon of olive oil. Add the onions and bell pepper and let them cook down until very soft. I left mine on low once they were tender and just let them continue to cook down. Add a tsp of water or so if they look like they are drying out at any point.

6. Chop up the tomato, avocado, lettuce, and cilantro if you haven’t already.

7. Make the cilantro-avocado dressing by placing all the ingredients into a food processor or high speed blender. You’ll probably need to scrape down the sides a few times. I was looking for a creamy consistency, but if you want something more runny like a dressing, add more liquid, either lime juice or water about a tsp at a time.

8. Heat your grill to medium-high heat. Cook steak for 5 minutes on each side or longer for your meat to be more cooked through. Take it off the heat and LET IT REST for at least 5 minutes more. Then slice it into bit size pieces.



At this point, everything should be done. You can plate your burrito bowl however you’d like, but this is how I did it:

Lettuce, rice, beans, steak, onions and peppers, cheese, tomato, avocado, cilantro-avocado cream, and a bit more cilantro.

Sloppy Joes

Working in the school system affords me the opportunity to travel a little bit more easily because my summer schedule is more lax. I still work, but I don't have a set schedule and can take my vacation at any point. Every summer since my parents and sister moved to the suburbs of Chicago seven years ago, I've tried to take a trip to visit them. Especially in the last few years, because my sister has started having children, and being a part of my nephews' lives is really important to me. Sadly, my husband doesn't have the same vacation time that I do, so most of my trips up north are solo. Since he and I both work two jobs, and he doesn't get home until after 8:30 every night during the week, I like to make things as easy as possible for him by leaving some already cooked and/or prepped meals.

Below is what I either cooked ahead of time or prepped and froze for him. Note: for side items, I left directions for steaming different veggies in the microwave. Easy peasy :o) 

  • Pineapple salsa chicken bake: cook a whole chicken, then shred it and combine with 1 jar of pineapple salsa, 1/2 can of diced tomatoes, 2 ounces of green chilies, and 1 cup of pineapple. Top with your favorite cheese --if you can handle dairy-- and bake for 15-20 minutes at 350 until the cheese is golden and bubbly.)
  • Chili pork pot roast w/ onions: place a 1.5-2 lb pork roast or loin and 1 small-medium sliced yellow onion in a freezer bag with 1 cup of beef broth, 1/2 can of diced tomatoes, 2 ounces of green chilies, 1 tsp of chili powder, 1 tsp of garlic powder, 1/2 tsp of cumin, and 1/2 tsp of onion powder. I left directions on the bag to place all ingredients in a crockpot on low for 6-8 hours. 
  • Stir fry w/ fajita strips: place 1 lb of beef fajita strips in a freezer bag with 1 tbsp of coconut aminos, 1 tsp of garlic powder, 1 tsp of ginger. Then I bought a pre-chopped bowl of stir-fry veggies (broccoli, peppers, onion, mushrooms, bamboo shoots, baby corn) from Trader Joe's and left directions to heat 1 tbsp of coconut oil in a wok (or large sauté pan) on medium-high heat. When it's HOT, cook the strips for 2-3 minutes and then remove. Add the veggies w/ 2 tbsp of coconut aminos, 1 tsp of garlic powder, 1 tsp of ginger and cook until desired tenderness is reached. Add the meat back in and cook for 2-3 more minutes.
  • Organic ribeye: place steak in a freezer bag with 3 tbsp of mojo marinade, 1 tsp of worcestershire, and 1/2 tsp of 21 Seasoning Salute (Trader Joe's). You can pan sear (high w/ 1 tsp of coconut oil for 3-5 minutes on each side) or grill (on medium-high for 5-7 minutes on each side)
  • Honey mustard chicken thighs - recipe in the The Paleo Kitchen Cookbook
  • Simple Sloppy Joes (recipe below)
Simple Sloppy Joes


Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Serves: 2-3

Special Tools:
Large saute pan with deep sides

Ingredients:
1 lb ground beef
1 tbsp Sugar free steak seasoning
1 tbsp Coconut palm sugar
1 medium onion, chopped
1 medium pepper, chopped
1 tbsp of red wine vinegar
1 tbsp of Worcestershire (sugar free if you can)
1 can of organic tomato sauce
2 tbsp of tomato paste
pre-made Paleo burger buns (Against All Grain has a recipe) or you can buy gluten-free buns.

Instructions:
Place the pan over medium heat. Add the ground beef and let it start to brown. As you begin to break it apart, add the steak seasoning and coconut palm sugar and continue cooking.
Once the beef is almost all browned, add the onion, pepper, vinegar, and worcestershire and cook for 3-5 minutes until the veggies begin to soften. 
Add the tomato sauce and paste and simmer on medium heat for 10-15 minutes. 
Place in an airtight container and store for up to a week. 
Note: waiting until the next day to eat it is always better! All the favors really have time to meld. Check out what Danny texted me...he added cheese, lettuce, coleslaw, and cilantro to his Joes. I think he liked them!

Grilled Tangy Burgers

My husband and I have been together for almost 7 years, and in that time he has come to be known in our house as “The Grill Master” for his impressive grilling skills. I can’t tell you how many times he has come back from the grill with just the most perfect, juiciest piece of meat! It’s awesome. Well, every time he’s done grilling, he used the grill brush to clean off the grates. You can imagine over 7+ years what that brush looked like, so for Christmas I decided to buy him a new one. It was one of those last minute ideas, so I grabbed one from Target. Only $9. It looked pretty decent and sturdy. Ironically, around that same time, I took over the grilling. I got tired of waiting for him to come home in the evenings to grill our meat. I just wanted dinner to be done by the time he came home and not rely on him all the time. I don’t mean to toot my own or anything, but I think I’ve developed a new skill. ;o) Lol. Back to the point of the story. The grill brush. Let’s just say, you get what you pay for. Most of the bristles fell apart after the first time I used it. I’ve only gotten about 3-4 uses out of it, and last time was actually the last time. I used our old grill brush to prop open the lid of the grill because the temperature just gets too hot otherwise. So naturally I would use the new one for the same thing, right? Wrong. I propped it open, walked away for 5 or so minutes, and came back to the whole thing melting down the side of the grill. Awesome. Just freaking awesome. Old grill brush side = metal. New one? Plastic that only appeared to be metal. Epic fail. Luckily these burgers survived and came out fantastic! So enjoy them, because I’ll never be able to make these burgers without thinking about that stupid grill brush ever again.

Grilled Tangy Burgers




















Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Serves: 2-4

Special Tools:
Grill
Foil lined baking sheet
Large bowl

Ingredients:

For the burgers:
1 pound of grass-fed ground beef
2 tbsp of fresh garlic, minced
1/4 cup of red onion, minced
1 tbsp of dijon mustard
1 tsp of cumin
1/2 tsp of salt
1/2 tsp of fresh ground pepper

For the garnish:
1 ripened avocado (brown with some green still showing, outer peel should give when pressed)
juice from half a lime
salt and pepper, to taste
4 strips of nitrate-free bacon
4 slices of tomato
4 small handfuls of spring mix (or your favorite lettuce mixture)

Instructions:
1. Preheat your oven to 365 and your grill to around 400.
2. In a large bowl, combine all of the ingredients for the burgers. Press down to even out the meat mixture and then score the meat by making an X to evenly divide the meat into 4 sections. 
Scoop out each section into your hands, roll, and then shape into a patty. Be sure to press down in the center of the patty more than around the edges, because the patties tend to puff up in the center as they cook.
3. Place your bacon on a foil lined baking sheet and put in the oven for 13-16 minutes, depending on your crispiness preference. Drain the bacon on a couple of paper towels.
4. While the bacon is cooking, place your patties on the grill for 7-9 minutes on one side, flipping ONLY ONCE and cook for 5-7 minutes on the other side. Less time for a more medium burger. Remove from heat and allow to rest for a couple minutes.
5. Prepare your avocado. Scoop it out, discard the pit, mash with a fork until most of the lumps are mashed well. Add the lime juice, salt and pepper, and stir a bit more. 
6. Put a handful of spring mix down on a plate, then place the burger down and top with tomato, bacon, and avocado. I served mine with a grilled vegetable medley.

Spaghetti Squash "Spaghetti"

When I was little, we had Italian night probably once a week. My sister and I LOVED spaghetti. And I know my mom didn't mind cooking it because it was such an easy process. Brown the meat, heat a jar of sauce, and then boil some pasta. We ate it until we looked like we were carrying little Italian babies in our bellies (I say Italian because that's what we were eating. If it had been Chinese food, it would have been a Chinese baby. Get it?). Man did we love to eat! Fast forward to when my husband and I started dating and imagine my devastation when I found out he wasn't a huge spaghetti fan! Whhhaaattt?! NO! Who doesn't like spaghetti? Well, it turns out that he isn't a huge marinara fan because as a kid, his mom would make his plate of spaghetti and she would always put way to much for his liking. In those days, he didn't have a choice, except to eat it. Then it would give him heartburn from all of the acidity. Poor guy. I can sympathize with the association of heartburn and marinara sauce, but still, not having spaghetti in my life was just not an option. I set out to create my own version that was thick and hearty. I think this meat and veggie sauce is a great way to have your protein and veggies in one pot. I love adding all kinds of vegetables, but you could stick to just your favorites. The final transition I made with this meal was moving away from real pasta. I heard about spaghetti squash a few years ago. I didn't know it even existed, but there it was, beautiful, bright, and yellow next to all of the other squashes in the store. The first few times I made it, I boiled it in water, which is fine, but you'll end up with watery "noodles." Instead, I recommend baking it. It takes a little longer, but the payout is not having soupy "spaghetti" on your plate. Unless that's your preference. Then go for it! So here it is, Paleo spaghetti. Enjoy!

Spaghetti Squash "Spaghetti"

Prep Time: 15 minutes
Cook Time: 1 hour
Total Time: 1 hour 15 minutes
Serves: 4-5

Special Tools:
1 foil lined baking sheet
1 large pot

Ingredients:
1 large spaghetti squash
1/2 tsp of garlic salt
1 lb of grass-fed ground beef
1 tbsp of bacon fat (or fat of your choice)
2 large garlic cloves, minced
1 tsp of sea salt, divided
1 and 1/2 tbsp of Italian seasoning, divided
1 tbsp of dried basil, divided
1 medium onion, diced
1 medium green bell pepper, diced
6 oz package of baby bella mushrooms
Other veggies I like to add: 1 large diced carrot, 1 chopped zucchini, 5-6 chopped asparagus stalks, and 1/2 a head of chopped broccoli
6 oz can of tomato paste
1 large tomato, diced
1 bay leaf
optional: up to 1/2 cup of beef broth

Instructions:
1. Cut the squash in half, sprinkle with the garlic salt, and bake at 425 for 25-30 minutes or until the outside gives. Let it cool, and then remove the seeds with a spoon.
2. While the squash is cooking, add the bacon fat to the pot over medium heat. Then add the garlic and saute until fragrant.  

3. Add the beef and let it begin to brown. When you start to break it up, add the salt, and 1 tbsp of Italian seasonings + 1/2 tbsp of dried basil. 
4. After the beef is cooked, scoop it out with a slotted spoon (leaving behind the fat) and then add whatever cut up veggies you want.
5. Once they’ve softened a little (about 5 minutes), add the can of tomato paste and stir. Season with the rest of the Italian seasoning, dried basil, and bay leaf.
6. Add the diced tomato. Mix well.
7. Then put the beef back in and stir. Let that simmer on low-medium heat for at least 20 minutes, but up to an hour. The longer it sits, the better the flavors will be. *If the sauce is too thick for your liking, you can add up to 1/2 cup of beef broth. My husband likes his thicker, so I usually don’t add any.
8. Shred the squash with a fork and divide among the plates.

9. Top with the meat and veggie sauce. Devour!

Meaty Stuffed Peppers

Yesterday began my second 21 day sugar detox. Overall, I'd call the day a success. I only got bummed out about not having something sweet once (OK, maybe twice) when I came home and found that my husband had brought home FOUR double-layer chocolate chip cookie brownies from work! Why?! (He said "They were free! Who turns down free brownies?!") It's like cruel and unusual punishment. I ignored them until I needed something in their general direction, saw them, and pouted again. But thankfully, my scary sugar withdraw hasn't kicked in yet, so I was able to walk away. He better eat those things before day 5. I know what's coming. Perhaps I should remind him about the angry sugar monster that is slowly starting to awaken. 

Hopefully this time around won't be so bad though. I'm sure it won't. I haven't consumed that many terrible processed carbs and sugars since ending my last detox. Leading up to my decision to complete the first sugar detox, however, let's just say, "Whoa!" I will admit, I know how to enjoy the holidays! There's never a break in the last quarter of the year. October through December is brutal; our Anniversary, my birthday, his birthday, Thanksgiving, Christmas, and New Years. I knew before the new year even started that I was going to try out the detox. If what I read was true, my whole world would be flipped upside down. Cutting out sugar entirely (well, I had three sweet potatoes and 3 green apples during the whole detox) was so eye-opening. Sugar is everywhere! Even natural sugars are something to be aware of and to monitor. 

It's been about three months since my last detox. I'm not sure how often you should do them, but quarterly seems ideal for me. I'll keep posting recipes that follow 21dsd in the event anyone else wants to give it a try. The best resource for anyone wanting to know what they can and can't have would be this Food List from Diane Sanfilippo. I follow mostly level 3, except that I allow myself to have cheese occasionally (goat's milk, if possible) and organic heavy whipping cream in my coffee. 

Meaty Stuffed Peppers













Prep Time: 15 minutes
Cook Time: 40 minutes
Total Time: 55 minutes
Serves: 3

Special Tools:
Saute pan
Aluminum foil
Cutting board
Chopping knife
Shallow baking dish

Ingredients:
3 bell peppers, tops removed and seeded (I used orange)
1 lb grass-fed ground beef
2 garlic cloves, diced
1 carrot, diced
1/2 large onion, diced
1/2 cup of sliced button mushrooms, diced
1 small tomato, diced
2 tbsp of coconut aminos
1 tsp of ginger
1/2 tbsp each of cumin, garlic, and onion powder
salt and pepper to taste
1/2 cup shredded goat's milk gouda (optional)

Instructions:
1. Preheat the oven to 350 degrees and while it's preheating, wrap your bell peppers in aluminum foil.
2. Place in the oven for about 20 minutes, or until they begin to give a little (but not falling apart).
3. While the peppers are in the oven, place a large sauté pan over medium high heat and begin to brown your beef (about 5 minutes). 
4. Add your veggies, except the tomato.
5. Add your coconut aminos, ginger, seasonings, and salt and pepper and continue cooking for another 10 minutes. 
6. Add the tomatoes and cook an additional 5 minutes. 
7. Remove from the peppers from the oven and open the foil allowing the peppers to cool slightly
8. Spoon in the beef mixture into the peppers until they are essentially stuffed tightly to the top. 
9. Place the peppers in the baking dish and cook for 15 minutes. Top with cheese (optional) and cook until melted, about 5 minutes. 
10. Eat it while it's hot! I served mine with a baby green side salad topped with homemade guacamole as my dressing.

Spicy Beef and Shrimp Tacos

A couple of weekends ago I was craving tacos. I woke up Sunday morning and as I was planning out our meals for the week while laying in bed, I started thinking about things that I used to eat that would be considered "unhealthy" in my eyes today. Taco Bell rang out (ha! no pun intended) and suddenly I was in the mood for them. But I will probably never ever again go to that fast-food place to satisfy that "south of the border" craving. The idea of it just grosses me out. Besides, most of the time I feel like cooking my own food, because it saves us money and I know what I'm putting in my body. So then I started thinking OK, if I'm going to make my own, what would be on my ideal taco. Two things immediately popped into my head, bacon guacamole and mango salsa! Those are probably two of my favorite condiments. Then I was kind enough to ask my husband his opinion about the protein. Would he like chicken and shrimp or beef and shrimp? I knew his answer before I even asked, but I just wanted to check. He's funny about chicken. He never really goes out of his way to request it unless he knows its going to be super flavorful, like my Moroccan chicken; so beef and shrimp it would be. I decided to be paleo bad and found some low-carb wheat tortilla soft shells from Trader Joe's that had only a gram or two of sugar, but you could keep it strict paleo and use lettuce cups for the shells or make your own. Lettuce wraps are typically my go-to shell for things like this and burger buns. However, like I said, I was craving real tacos (and I was too lazy to make my own shells on this particular day!). 

*To keep this 21 Day Sugar Detox approved, leave out the mango!


Spicy Beef and Shrimp Tacos





















Prep Time: 25 minutes
Cook Time: 25 minutes
Total Time: 50 minutes
Serves: 3-4 

Special Tools:
Large saute pan
Cutting board
Chopping knife
2 medium bowls

Ingredients:
1 lb. of grass-fed beef
1/2 pound of large shrimp, peeled, deveined, and tails removed
1/2 medium onion, diced
1/2 medium green pepper, diced
1 tsp of ghee
My Tasty Guacamole (with bacon)
My Mango Avocado Salsa (though you can leave out the avocado since you're making guacamole)
2 cups of spinach leaves
1 + 1/2 tbsp of cumin, divided
1 + 1/2 tbsp of chili powder, divided
1 tsp + 1/2 tsp of garlic powder, divided
1 tsp + 1/2 tsp of onion powder, divided
1/2 tsp + 1/4 tsp of kosher sea salt, divided
1/2 tsp + 1/4 tsp paprika, divided
1/4 tsp + 1/8 tsp cayenne pepper, divided
1 pack of Trader Joe's low-carb wheat tortilla soft shells (or you could make your own like Danielle Walker's amazing Coconut Flour Tortillas recipe to keep this totally paleo)


Instructions:
1. Heat the saute pan over medium heat and add the bacon for the guacamole, until crispy. Then drain the strips on a paper towel and set aside. 
2. Leave the rendered fat from the bacon in the pan and add the ground beef.  
3. Once it begins to brown slightly, add the larger portion of each of the seasonings (the smaller portions will be to season the shrimp), and the diced onion and pepper. 
4. While the beef is cooking, make the guacamole and salsa. 
5. When the beef is cooked through, use a slotted spoon to remove the beef from the pan and set aside, leaving behind the juices from the bacon and beef. 
6. Add the ghee and let it melt. 
7. Add the shrimp and the smaller portions of the seasonings. Saute on each side for about 3 minutes. 
8. Then add the beef back in with the shrimp and stir. 
9. Set your tortilla shells on a plate and spoon some of the beef and shrimp, then add the spinach, a spoonful of bacon guacamole and a heaping scoop of the mango salsa (I won't lie, I piled that sh*t on!).

Crust-free Mini Paleo Pizzas

What is it about pizza that makes us fiend for it? That was totally rhetorical. Believe me, I'm well aware of the MSGs that are found in most commercialized pizza restaurants. I do hold out that there are still some mom and pop places that makes their pizzas without MSGs. I read an article recently that I'm trying to track down again so I can share it about the ingredients in the most popular pizza joints across America (Ha! I found it!). It definitely caused some eye-rolling and sad faces from my friends and I. So as an alternative to going out and buying a pizza packed full of MSGs and whatever else we really shouldn't be eating out of pure convenience, this recipe is a great paleo alternative for those that are looking for something that tastes like pizza, but isn't going to make you feel like crap afterwards. And don't tell me this is just a bun-less burger. That takes away all the fun of making these! If you set up several bowls with a variety of toppings, this would be fun to do with kids.

Crust-free Mini Paleo Pizzas













Prep Time: 15 minutes
Cook Time: up to 17
Total Time: about 30 minutes
Serves: 3 for a small meal or 9 as appetizers

Special Tools:
Large mixing bowl
Foil lined baking tray

Ingredients:
1 lb grass-fed beef
1 egg, whisked
1 tsp of italian seasoning
1/2 tsp of dried basil
1/2 tsp of kosher sea salt
1/2 cup of sugar-free pizza sauce
Toppings of your choosing


Instructions:
1. Preheat the oven to 425 degrees.
2. Mix the first five ingredients together in a large mixing bowl with your hands until well combined.
3. Take 1/4 cup of the mixture and flatten into 1/2-3/4 inch patties and repeat until all the meat has been used. Note: press the center down a little more because the center always puffs up as it cooks.
4. Bake the patties on the foil lined baking tray for about 8-10 minutes
5. While the patties are baking, get your toppings together. (You might choose differently, but the picture shows mushrooms, black olives, green peppers, sun-dried tomatoes, un-cured pepperoni, and fresh basil...yes, I packed a lot of toppings on my patties!)
6. Take the patties out of the oven. If too much grease has pooled on the surface, you might want to take a paper towel and wipe them off.
7. Top your patties with your favorite toppings and put back in the oven for another 5-7 minutes.
8. Remove from the oven and let the grease drain from the patties on a paper towel.

Twice Baked and Stuffed Squash

Today is going to be a busy Saturday! I went to bed so early last night, which was amazing! Don't laugh at me. I was laying in bed catching up on shows I missed while I was visiting my family in Chicago last week. I don't think I made it a full half hour in before I was out! It couldn't have been later than 10:30. I can't remember the last time I fell asleep that early on a Friday night! Ah, the joys of being an adult. And I don't even have kids yet! Anyway, back to my day today. I guess because I went to bed so early, that explains why I was waking up at 6:45. My husband and I had a 9:00 AM appointment to get our cars serviced, so it wasn't like we could sleep in anyway. So here I sit, in the lounge, waiting on my car to finish getting her yearly check-up. From here, I'll be heading straight to the gym to tackle the final Open WOD, 14.5. I watched several of my friends struggle through it yesterday, and I'm not going to lie, I'm a little stressed about it. This, by far, seems like it's going to be the worst one! But I'm going to do it and then will be ready to celebrate finishing that bear!

How will I celebrate you ask? Well my girlfriend Lyndsey and I are going to have a girls night out. There's a local restaurant called Miccosuke Root Cellar that has amazing food! It's all locally grown and farmed. The place itself is really tiny, but the atmosphere is stellar, and the wine is even better! Then we're going to let out our inner teenage girl and go see Divergent! Don't know anything about that movie? Well all you need to know is that Theo James is in it. Two hours of eye candy. Yes, please! 

Oh, today is also my nephew's 4th birthday! He lives is Chicago with his parents and grandparents. So sadly, I won't be there to celebrate. But, like I mentioned earlier, I did travel up to there to see them last week. I wish they weren't so far away! Ah well, I guess that's what vacations are for.

Enjoy this recipe guys. I love it because it is super hearty and looks like a lot of work, but is actually pretty simple!

Twice Baked and Stuffed Squash













Prep Time: 10 minutes
Cook Time: 50 minutes
Total Time: 1 hour
Serves: 4

Special Tools:
Baking tray
Tin foil
Large frying pan
Large mixing bowl

Ingredients:
2 small-medium acorn squashes
1 lb of ground beef (or pork)
4 strips of nitrate-free bacon
1 medium onion, diced
1 orange bell pepper, diced
4 eggs
1/2 cup of shredded cheese (optional)
1 and 1/2 tsp of garlic powder, divided
1/2 tsp of onion powder
1/2 tsp of paprika
1/2 tsp cumin
1/2 tsp of sea salt + a pinch for each egg
1/2 tsp of fresh ground pepper + a pinch for each egg

Instructions:
1. Preheat your oven to 425. Cut your squashes in half. You can scoop out the seeds now or wait until its soft, which is what I do. 
2. Line a baking tray with foil. Place the squash halves face down on the baking tray and put in the oven for 25-30 minutes, or until the outer skin gives when you press it. Remove from the oven, turn them over, scoop out the seeds and let it cool for a few minutes. Turn the oven heat down to 375.
3. While your squash is baking though, place the bacon in a large frying pan and cook on medium until crispy, about 10 minutes. Remove the strips and let them drain on a paper towel, then chop them up.
4. With the rendered fat in the pan, add the ground beef and let it begin to brown for about 10 minutes. As you break up the beef, add in the onion, pepper, garlic (1 tsp) and onion powders, paprika, cumin, salt, and pepper. If there is a lot of juice in the pan after about 10 minutes, turn up the heat and let it evaporate, or you can drain it.
5. Scoop out the squash into a large mixing bowl (be sure not to pierce or tear the skin or putting it back together will be tricky), and smash the heck out of it with a fork. You could also use a hand blender, but that's up to you!
6.Add in the beef mixture, chopped bacon, and the remaining 1/2 tsp of garlic powder and stir to combine.
7. Spoon the stuffing back into the squash and press down gently in the middle to create a little bowl. 
8. Crack an egg into each of the acorn squash halves, sprinkle a pinch of salt and pepper over each egg and then top with shredded cheese (optional). I like mozzarella!
9. Place the halves back on the baking tray and put in the oven for about 20 minutes or until your eggs have reached desired doneness. I prefer the white cooked through, but the yolk somewhat runny.
10. Serve immediately. I sliced up half an avocado with mine.
